I checked to see (using the aforementioned script):

Trying to rebuild the offending packages I got a message that they did not
exist so I checked w/ fink and fink commander and as you will see below, they
are very present. However, using commander and trying to rebuild or reinstall
them I get the same "package descriptions don't exist":

Is this because evolution is such an old version and it needs the older versions of libgnomeprint?

Ummm...if you recall I said to install
gnome-libs-dev
and
gnome-print-dev
to solve the build problem. Your other issue is due to the fact that libgnomeprint2 and libgnomeprintui2 are installed on your system, but aren't supposed to be:
