I think JSBSim does a good job of modeling single engine operation. The big problem is with these cheesy twist-grip rudder controls on the joysticks. They make the engine-out work harder than it has to be. As far as practicing goes (without rudder pedals), I think one is better off using auto-coordination to take care of the rudder, and forget even trying to use the twist-rudder.
