Unfortunately, that's how DOS implements pipes.  That's not a matter of 
MORE or SORT, that's implemented by COMMAND.

I think there's also PG for free, and LIST if you can deal with "free but 
not really free".  Or you could use the Gnuish Project port of less.

MS-DOS has always supported MODE MONO if an MDA or compatible is present.
