First find all the documents, images, whatever you want to keep, make sure they're in a separate folder, away from the program folders, and back them up. Uninstalling the app shouldn't remove your documents, but backup anyway. My suggestion: untested but seems your best shot -- uninstall Office 2001, reinstall Office 98. I think that it should be able to read files created by the later version, on Windows the file format has been stable since '97, anyway. If not, they should be able to open them with some loss of formatting, but retain the text.
