Three possibilities come to mind: disk caching, file system buffers and process/thread priorities.
The transfer process in a cooperative multitasking system like OS 9 can essentially own and run the whole show. In OS X, the system determines what process gets priority and CPU time. With a decent disk caching/buffering scheme, the transfer process should be writing directly to memory, not the disk, and the system would do the disk writes as CPU time is available. It should work flawlessly every time, though it might be slower than in OS 9, depending on how many other things are happening on your system, like downloading a large file over the internet or running a filtering tool in Photoshop. If you get dropped frames in 10.2.2, this is a serious error equivalent to data corruption when doing a file copy from one drive to another. Did you have problems before 10.2.2? I suspect the cause is a change in the FireWire I/O system in 10.2.something. It's not acceptable and should be reported to Apple.
