No, I have the standard install, nothing strange.

I host my own mail server.  I am on a Win2K laptop right now using the same
IMAP account, so I know it works, has been for a year now, so it's something
specific to the Mac.  The server install is standard, no strange paths or
anything else.  Deleting the preferences you mentioned, is that only mail
pref's?  Or will I have to setup other stuff again?

I have a hardware firewall, but like I said, it works from 2 other PC's just
fine, that port is open on the firewall.
