If other IMAP clients on the mac give you the same problems, I'd poke around the IMAP software you're running...it has to be that, I would think. Check any help resources for that software. We're using UW IMAP server 4. something, and have never had the kind of problems you're describing.
Try creating another user on the mac and testing the connection as that user. That's the best way fo isolating whether a problem is in user prefs or not...
