If other IMAP clients on the mac give you the same problems, I'd poke around the IMAP software you're running...it has to be that, I would think. Check any help resources for that software. We're using UW IMAP server 4. something, and have never had the kind of problems you're describing.

Thunderbird, which is the Mozilla mail component rolled off separately <http://www.mozilla.org/products/thunderbird/>
Pine <http://www.washington.edu/pine/> which can be compiled and installed as a command-line client.
Mail Drop, which is classic only but is a nice, fast. lightweight pure text imap client. <http://www3.baylor.edu/~Carl_Bell/Mail_Drop/index.html>
Eudora works with imap servers, as does Outlook and Entourage.
