OP wants analog video output from analog input. I'm not quite sure why OP needs to use a computer at all . . . :-)
However, since OP seems to want to involve his Mac _somehow_, I figured I'd contribute a couple more computer-related alternatives: * (Most?) D8 cameras can play Hi8 tapes and output that video as a DV stream. A bit easier than using a separate box or other camera type to do the same thing, IOW a more efficient process. or * IMO the best way to go directly from analog video to DVD (or in this case, back to analog/VHS) is with the "Instant DVD USB for Mac" device, under $180 at OWC: <http://eshop.macsales.com/Item_MailList.cfm?ID=5448&Item=ADSMACAV1750> I set up a very picky customer with one after he had tried a number of other solutions (eg: vhs-FWbridge-DV-iMovie-iDVD-DVD) and it was the simplest solution of all, plus it produced the cleanest-looking DVDs. The resulting mpeg files aren't easily directly editable the way are DV files but the included SW does allow for trims and similar simple edits, as well as titling and such. I did read OP's desire to minimise costs and with economy in mind avoid using DVD-R. However, I'd suggest archiving any captured video onto DVD. It's trivially easy to copy DVDs to VHS once one has an edited master DVD on hand.
