Sorry to reply to my own post, but I appear to have found part of the answer to my question - which is the PSU side of things. The supply is almost but not quite ATX compatible and needs a wire from an ATX supply cut if you want to use one (or, from the look of the diagrams on the Apple site, an extender cable with the wire missing). So for reference in case anyone else is doing similar, the following two sites have details.
