I'll through in a recommendation for the Olympus C-5000. It's being superceded by newer models and is widely available around the web for 250-300 bucks. It's 5 megapixels, 3x optical zoom, simple to use program mode, but also has fairly advanced manual settings, and has excellent image quality. Only negative is that the movie mode does not do sound. I have the model that preceded this one, the c-4000, and am extremely happy with it. I've almost given up using film.

In general, go for something with 4 or 5 megapixels, you'll not be happy with less, and more is really not needed by most of us.
