I have only had time to glance over the crates they were in but I am going to assume that they didn't come with any software.

My question is can I legally install the original version of the OS that they shipped with, or would I have to get copies of the OS for each system?

John,

Every Mac is sold with an OS, so you should be able to install that Mac's original OS on it without any legal issues. However, knowing what version that was could prove tricky, so the best thing would be to install the earliest OS that will run on the machine. Mactracker can help you figure out what that is, if you don't already know. Or install one of the OSes that is available free for download from apple.com (6.0.8 and 7.5.3 I believe).
