classic apps, be able to get at their old data and use it again if they
got one of these Intel Macs?

Not sure what you mean by 'IN' Classic apps.

I'm quite sure file sharing will still work. IOW, the data files, like PhotoShop image files, will be easily transferred to the new systems.

But if you mean data kept on cards of a HyperCard stack, or some other system which relies on automatically saving to itself, then there may be a problem. You'll probably have to come up with some kind of routine to write out records and fields to text tiles.
