For youtube the solution is simple: either figure out why your network is slow, or use something like CosmoPod to download the Youtube videos to your computer where they'll play back much better. This is my solution; we've got the basic 1.5 megabit internet connection at home, youtube vids are horrible on it, but downloaded they play just fine.
