The FW800 is the first Power Mac that is not able to boot Mac OS 7/8/9. 
Classic should work though.

On my machine (MDD with FW400 and thus able to boot Mac OS 9) I just started 
the installation of Mac OS 9 in the Finder of Mac OS X and it went right into 
the Classic environment. Since the whole installation went on inside of 
Classic the resulting version of Mac OS 9 is not bootable. But since the FW800 
cannot boot into Mac OS 9 anyway this wouldn't matter to you.

I've read somewhere that all you need is to copy the System Folder, but I 
never did it and don't know exactly how it goes.
