Here at the department of computer science (University of Bergen) we are Using Just Linux. Currently RedHat 8.0 ;( I would rather have another distro, but as a student its not my choice. The engineers are going to upgrade to RH9 this summer. At lower grade we have about 45 computers. For master grade students I don't have the numbers. The Whole faculty for Mathematics and nature science was going for linux, but of cause people protested (biology girls and such ). "We need M$ Office" ARG!
