been trying to stay out of this one, but since i've been using all sorts
of HP printers for several years now, finally had to jump in.

The basic deal is this:

if a printer has a parallel interface AND (important) specifies PCL (3
or 5, etc) and/or Postscript language, it WILL work.  And typically the
HP DJ 550C/560C/6XXC driver works for most HP deskjets, including MOST
of the 8xx series.  HP did make several non-PCL printers using PPA (aka
WinPrinters) - these originally had NO support; I believe there is some
now; haven't bothered because i refuse to buy win-only crap.  If the
vendor/catalog site you are buying a printer from doesn't specify
parallel interface AND PCL, etc, then HP's website has all the  dope. 
(BTW, I notice that the latest Global Computer catalog I got seems to
have ONLY PCL3 Deskjets, whereas a couple of years back it seemed like
half the stuff listed was Win-only, so I'm wondering if HP has quietly
dropped the WinPrinter thing - congrats if so)

Secondly, you're also correct that the DJ 550/560/6xx driver is pretty
generic, so you won't get all the bells and whistles.  But, you wil be
able to print, both text and graphics.

(as a quick list, I'm using HPDJ 682, 850, 855, 895, 2000C, 2500M, as
well as a couple of HP Laserjets {which typically have Postscript as
well as PCL capability} - these printers all work fine under Linux).
