I removed Growl and Mail still crashed every time. Re-installed it just to insure I uninstalled it correctly and still crashed every time. Removed Growl manually according to instructions, automatically using their "uninstall" script, and frantically using the hunt-through-every- folder-you-think-might-have-something-to-do-with-it method and still it crashed Mail every time. (Sending myself replies to a message mailed to myself to test it). Searched using Spotlight, Find, and Terminal (which I admit I don't work well) and found no remaining files with the phrase "growl" in them... However, on a hunch, in the system Library/Mail/Bundles I found a folder GrowlMail.mailbundle which, when deleted, solved the problem. Probably, anyway. We will see. Anyway, Growl is now on my avoid-at-all-costs lists until proven otherwise.
