this is what I do with floorlenght or longer medieval dresses/houppelandes;
put the garment on the floor folded in half (sideways). this gives you an idea of the curve from front to back. most of the floor lenght or longer garments needs more lenght at the back than at the front, and needs to be of a comfortable lenght at the front. ideally you should have a sloping curve from center front to center back. I tend to go with 10cm/2 inches longer at the back for dresses without trains. this is too long for somebody without a butt btw.

get a tailors chalk and draw the curve you want to test, put on garment to see if this will work. readjust if necessary (most people are a little loopsided) and gently start trimming. trim 2-3 times (a little at a time) instead of once if in doubt.
