There are some reasons why you don't hear it: the chien is not part of the traditional zanfona at all. It was added fairly recently by some makers, but it plays no role in historicizing traditions. I am deliberately not making any statement about authenticity, because what counts as authentic is an inherently political question and invokes some really problematic issues in general. So let's simply say that those strains of Galician music that look to the past and try to (more or less accurately) recreate something from that past generally eschew the chien.
