Are there any programs other than cakewalk that can do this? I'd like to
stay away from software sequencers. (and software, in general) When I go to
record my songs (using Samplitude) I suppose the stuff in soundfonts will
be recorded too (If I have the recording setting to 'what you hear')?

Thank you very much for all that Leon. I've asked that question many times
in many different places and that was the first time somebody explained it
to my simple mind ;) I appreciate it quite a lot.
