Yes, installation services are available from IBM and service partners. As John Eells points out, if you prefer to install z/OS from scratch in house then you'd use the z/OS Customized Offerings Driver, available at no additional charge with your z/OS license (assuming electronic delivery anyway). This process should be reasonably well documented (or better) in the "z/OS Planning for Installation" book. You can find the current version of that publication (and much more) here:
