Wow. Talk about possibly opening a can of worms. I don't mean that in a 
bad way, it's just that I think every single user is going to have a 
different answer.

Let me put my answer this way: I fiddle with vintage macs like LC IIIs. 
Now, that machine will run up to System 7.6.1, and can do it with up to 
36 megs of RAM. With a software hack, you can get OS 8.1 running on 
there. However, to my mind, you're burdening the Mac with system 
overhead that you don't need. You can get a lot of the functionality of 
8.1 by using System 7.1 and adding a few control panels and extensions 
while still running under a lot less RAM and a whole lot quicker. I'm a 
minimalist.

Now on the other hand there are people who insist on running 7.5.5 on 
their Plusses or Classic IIs.  They seem to feel that there's something 
there that they want.

To get back to OS X, I'm a believer in the idea that you should hold 
off unless your Mac was designed for it (i.e. OS X shipped with it) 
*OR* you need something that's only going to run on it *OR* there's 
some other compelling need. I don't feel the need to keep up with the 
Jones'. Some people do, and more power to them, because I think they're 
going to need it.

If OS 9 (or 8.6) is fitting the bill for you, don't upgrade just 
because you can. Hardware upgrades like a bigger, faster hard drive or 
more RAM or a better video card will speed up your current system and 
reduce the number of headaches that you'll have during the upgrade.

In my view, OS X is still in a very early stage of development. 
Remember, the Mac OS didn't really get ready for prime time until 
System 6 (IMHO). There's no need to jump on board and deal with it 
running slowly on your machine when you can sit back and enjoy the 
speed of the classic OS.
