Non-plain-text email is evil. Really, it is. And it has nothing to do with default fonts, etc. Not all email programs can read Rich Text. Even better, even those that DO read/write stylized e-mail do not all use the same standard. Some use HTML to do stylized text. Others use "Rich Text Format". Others do other, weirder things. The problem comes in what happens if you try to read an RTF or HTML email in a program that can't handle that specific variety of email. Some of my email accounts require me to use an old UNIX mail program called Pine. If I receive HTML email, at best I get to look at the raw HTML code... at worst I have to save the email to a file, then open it in a Web browser... except that these email accounts are on remote UNIX servers, which means I then have to make sure it gets saved into my Public HTML directory so that I can access it from another computer... or I have to FTP in and fetch it. All to read an email. If it's RTF email, all I get to look at is garbage. You are correct in assuming that Mail doesn't actually send RTF unless you add style to your text.
