My sister-in-law has a rev A iMac with a bunch of USB stuff (printer,
scanner, superdrive, CD burner) that all work fine. Sometimes devices
aren't recognized and initially but if she unplugs them and plugs them back
in, they work OK. Is it connected to a hub or directly to the computer?
Have you tried booting up and THEN plugging in the Zip drive? How about
booting with nothing but the keyboard and mouse and then plugging it in?
USB is less fincky than SCSI but there still is a little voodoo involved
sometimes.
