Again, 8.1 or 8.6.

Add more RAM, then run OS X. Of course, with such a modern operating system running, you'll probably run out of HD space real quick, but you said you had other IDE drives that you can use instead.
-PowerMac 4400/160 , 64MB Ram, 2GB (Currently 9.0)9.1 or 9.2.2
