Pretty much wherever you like. It will all be in your User folder anyway.
Actually, much of the answer is pretty straightforward:
Photos should go in your Pictures folder, already present in your User folder:
Movies (iMovies) should go in the Movies folder.
iTunes should be set to automatically COPY any MP3s you add to it into your Music folder (the default location for music anyway). You can then delete the "original" MP3 from wherever you've stored it (most likely the desktop, that's what people tend to do).
Applications should usually go in the Applications folder (Apple apps in particular; they don't get updated properly if they are moved from there).
Documents (Word files/Textedit/Appleworks et al) can go in a folder of your own making and that folder can be put almost anywhere you want: many people put such things on their desktop, but I think that's a bad idea. I keep several folders around for different projects, and drag files into their aliases on the Dock to sort them.
