Video mirroring is just providing the ability to output exactly the same image that is on the standard monitor to a second output device. Where this can be handy is in using the second video signal to drive a video projector or large screen television, so that a larger audience can see the screen than would be able to crowd around and see the "little" monitor. It is also useful for other purposes such as other respondents have mentioned, but video mirroring is NOT helpful for increasing one's desktop space.
I am not aware of any easy way to shut off the iMac's monitor while using a second monitor.
