Graphics are one of VPC's limitations. Theoretically the M$ version VPC7 is supposed to have much better graphics capabilities, but it's not out yet so it's all a bit speculative.
AFAIK it won't have better graphics capabilities, the graphic card support remains a generic S3 Virge... this was promised, but scrapped for this release. You can read about this on Apple Insider [1] and screenshots on Microsoft's site seem to confirm that. [2]
