This may fall under the "obvious" category, but it also has fallen into the "gotcha" 
category a number of times.  Make sure to disable the Microsoft SMTP service, as it is 
installed/started automatically by Microsoft (another round of "Gee, Thanks, 
Microsoft").  If you forget to disable it, weird things can happen ("Nobody can send 
mail to my domain" or "I'm not getting all my mail", etc.).
