I'm an ISP as many of you are, what do you tell a customer when you're
not able to deliver it's mail to a domain that has an IP in it's MX
record?

IMGate/postfix will deliver to MX's that has "numeric" RDATA fields, as will most dedicated MTA's, including sendmail.

and postfix is usually pretty RFC/restrictive.

If Imail won't, it is in a fairly tiny minority, afaics.
