I am interested in hearing more about why the 'Disable SMTP "VRFY" command'
should be UNchecked.  I have inherited a production server running IMail v.
6.06 and that box is checked on my software.
If it is checked, that means that your mailserver will not let mail clients know that SMTP AUTH is available (SMTP AUTH will be available whether or not you check that box). Most mail clients will only use SMTP AUTH if [1] The user requests it, and [2] The mailserver says it can handle SMTP AUTH.

What happened is that your predecessor checked that box for some unknown reason. You would need to check with him to find out why he didn't want mail clients knowing that IMail can use SMTP AUTH. :)

Should that be UNchecked even if I am using SMTP Authentication?  Or doesn't
it matter?
It should *always* be UNchecked, unless you have a reason not to (in other words, if you can explain why it is a good idea to have it checked, you can do so; otherwise, you shouldn't check it).

If I recall the folklore correctly, once upon a time there used to be a mail client that wouldn't work properly with mailservers that announced that they could use SMTP AUTH. Ipswitch decided to "do the right thing" and add that now obsolete option, but never moved it to the "Advanced" section.
