That often happens when filters are created (such as blocking mail with the word "mortgage") -- you have to be very careful with filters.
... the quemanager nor smtp are using enormous amounts of process time so I don't know what else could cause it.
Does this mean that the problem is high CPU usage? Do you mean "neither quemanager nor SMTP" (meaning that those two are NOT using lots of CPU time)? If you use the Task Manager, look at the Processes, and click the "CPU" button, it will sort the processes by the percentage of CPU time being used by each process.
I am copying the logs off now, can large spool file, 1.5 gig+, cause problems such as this?
They shouldn't -- IMail just appends to the log files, which shouldn't take much time, even with very large files. However, a 1.5gig log file almost always is a sign that there is a problem -- for example, a spammer has hijacked your mailserver and started sending out a lot of spam, or you may have a mail loop.
