Turn off the logging to see if it becomes more stable.

SMTPRCV greeted me with a 600MB logfile at 8AM this morning because of
infected PCs trying to deliver mail onto the server.  Of course SMTPRCV was
550'ing them, but each 550 added a new line to the log file...
