For one, WSP allows for security certificates.  Apache does not, unless you shell out 
some $$'s for something like Stronghold (or unless I'm behind the times and missed 
something).  Otherwise, there's not much difference in terms of functionality. Yes, it 
does IP-less domains, as does IIS3+. Decent GUI, great docs.   The docs can teach you 
things about Web servers in general, not just WSP.  I run Apache myself anywhere I 
know won't require SSL (like development, etc).  Actually, Apache is more flexible in 
terms of setup, once you get a handle on all the myriad commands available.  For 
example, on a dev server here, I run different sites on different ports using Apache, 
so people outside my NATed LAN can connect to different sites on the dev server using 
my one incoming WAN IP.  Can't do that with WSP.

I've never tried ApacheNT for any heavy production work.  Has anyone?
