There's no way to force iMS to use the specified IP?  I don't understand the
significance of the sendingIP attribute then.  Is there any way to guarantee
that the OS IP address is never referenced in emails that iMS sends?

Look in your POST log.  It should show you the IP address that the POST
server is requesting.  Note that the OS might still use a different IP.
