Not sure what your question is...

If you are unable to get separation black working today, then you will need to 
modify iText in order to get it.  It will, of course, require you to get a 
better understanding of color and PDF - and then of iText.

Or I am sure that Bruno will be glad to offer some paid consulting services to 
have the work done for you.
