Hi, i just tested your demo (http://demo.itextsupport.com/xfademo/) and I opened the source PDF within 3 pages. I can see the XFA data (XML). I change the data, for example only tag " <Name/>" by "<Name>TEST</Name>" and press Update XFA data. Viewer shows me the result PDF but the form field is empty (not change) :(((( and yes, I can see 4 pages.

Now click Update XFA data. When I do this with your 3 page document, I end up with 4 pages, not 1. Also the Reader-enabling is broken (but that's because the demo doesn't work in append mode). The problem with the form is apparently that all options are shown (too much data is shown). I guess this is an example where you need the full Adobe LiveCycle solution, or... as you're using iText 5: you probably need a license, so you may want to establish a business relationship with iText software.
