OK, *finally*got it....

I had to remove some v4l stuff:

yum remove video4linux-kmdl-2.6.20-1.2962.fc6-20070731-81.fc6
yum remove video4linux

Now I can record *and* playback with no "fast audio" or choppy video. 
Apparently this is a known issue with v4l:

Took me a while to get here, because I thought I needed v4l for pvr-350 
tv out... but I see now I was mistaken.
