There are 2 things that I think you need to make sure are checked in your e-mail settings.
Go to the Tools menu on the menu bar. Select Options. Tab to E-mail... On the Preferences tab select the Advanced button. There are 2 check boxes on this tab that need to be checked. One has to do with completing names, and the other has to do with suggesting names. If they are not checked, press space on each one to check them. Click OK in each dialog box until you are back to Outlook.
