It is quite easy to have form field help prompts read to you.  I would 
suggest that if you use simple edit boxes from the forms toolbar that you 
add help text in the properties.  If you are using Word 2003 and you have 
the forms toolbar active then use Alt key to bring up the menu bar and 
CTRL-Tab until you hear "Edit box.:  If you have not put an edit box in the 
form then press enter to place it at the cursor's position.  You might 
consider creating a table with headings and then just put edit boxes in the 
cells that need to be filled in.  Once the form is protected then the tab 
key will move you between the edit boxes in the table.  This might be a good 
method if you only want to fill in a message for one person at a time and 
print it.  Remember that you will have to remove the protection from the 
form to spell check the document.  When you put an edit box at the cursor 
position by pressing enter on the choice from the forms toolbar, you can 
then add help text to the edit box.  Move back to the forms toolbar and use 
the tab key to move to the "properties" button and press enter.  Use the tab 
key to move to the "add help text" and press enter.  There are two page tabs 
in the resultant dialog, one for using status bar help and one for using the
f1 help key for help information.  The active page should be the status bar 
choice, which is the one I would suggest you use.  Use tab key to move to 
the blank edit box and type in the help text you want to hear when you tab 
to that edit box when using the form.  After typing in the text use tab key 
once to move to the OK button and press enter.  Press enter again on the OK 
button that appears.  After the help messages have been applied to the edit 
boxes and all boilerplate information is in the document, save it as a Word 
template.  Press F12 to bring up the "save as" dialog box.  Name the 
template and then tab to the "files of type" combo box and use down arrow to 
move to the "document template" choice and press enter to accept it.  use 
Alt-I to move to the "save in" combo box and save it in your Word templates 
folder.  You should then protect the form so that when you create a new 
document based on the template only the fields that you tab between are 
presented.  To protect the form use Alt to bring up the menu bar, then use 
CTRL-Tab to move to the forms toolbar, and then use left arrow twice to move 
to the "protect form" button and press enter.  Use the same button to remove 
protection when you need to.

If you use edit boxes in a table you will find that when you start a new 
document based on that template that the help text will be read just fine as 
you tab through the form.  Of course that is providing the form has 
protection turned on.

The above is based on the assumption that you are using Word 2003.
