I just use the Jaws dictionary manager in Outlook to stop Jaws from reading the greater than or vertical bar signs by replacing them with a space. Nip the greater than sign in the bud for good (grin)

Tab to the replace all button and press the spacebar. This also does it a lot faster than word. Hope this helps.
