Fonts, layout, pictures, and style are all things that PDF does that text does not. There is also a greater chance of documents looking the same on multiple computers by using PDF (you don't have to worry about fixed-width vs proportional fonts, for instance).
Unfortunately, these features can also be a problem for Word. When I was last looking for a job, I had sent out my resume in PDF format, and one company wrote back and requested a word doc. I sent one that I had created in the latest Word for OS X. When I showed up for the interview, I was surprised that their printouts of my resume had the formatting all screwed up. Luckily they looked past that and I got the job.
