Printing. Or, more appropriately, color separation.
Converting an image to a CMYK separation is a fairly technical problem
that has quite a few patents surrounding it. None of the open-source
graphic artist tools have cracked this nut even though it is required
before you can actually send a document to a high-volume print house.

One doesn't /have/ to use Photoshop only on Windows. Last time I checked
(a while ago) Photoshop runs fine under CrossoverOffice. Not ideal, no
doubt, but doable. I'd check, but I don't have Photoshop.
