You can run MS Office under Codeweaver's Crossover Linux (formerly
CrossoverOffice). It's only like $40 for six months of support (don't
worry, it doesn't implode after that, the money is only for support). IE
also runs on it fine - I have it on this FC5 desktop. They even have a
version for Mac!

Download it now from here http://www.codeweavers.com/, try it with apps
you think she might be using. Look at the list of known-to-run software
on their website. It's a lighter weight, but less flexible solution than
VMware.

Don't both the VMWare and Codeweavers solutions require that you have
a copy of the necessary MS software to load into your system?  Some
variety of Windows for VMWare, and Office for both?
