Is there any particular reason you have to dump the whole movie as jpeg
files? You could instead just take snapshots at appropriate points. Run
mplayer like this:

$ mplayer -vf snapshot -dvd-device /dev/dvd dvd://1

Every time you press the s key you will get a PNG snapshot. From there
you can convert the PNG image to whatever you want.

No. This just makes mplayer expand the image to take over your whole
screen. It keeps the scaling as directed in the file or as in the
override on the command line. If you are using a normal monitor with a
4:3 aspect ratio and the movie is widescreen, mplayer will place black
bands above and below the image to make it look right. This is sometimes
called letterbox.
