You could, but I don't recommend it! Climb speed drops quite a bit, and I would guess that stall speed does as well. Been there, done that. What will really blow your mind is to fly with only one gap seal installed (hey, I'm an experimenter)....the plane will have a very real and astounding tendency to corkscrew through the air, as one wing is provide normal lift, and the other isn't. It's dramatic enough to tell me that lift is seriously compromised without gap seals installed, counter to what I'd have thought.

Another option that works OK is to simply foam and glass the whole wing and then cut the outer wing off from the stub wing, on the outboard side of the gap, dodging the WAFs. I did the "retrofit" version of this on N56ML at the 900 hour mark, using allen head cap head screws and captive nuts on the wing attach fittings, with tiny access holes the diameter of the allen bit to install the WAFs See http://www.n56ml.com/900hour/ for more on that. I should say that "your mileage may vary".....and don't try this if you don't have a degree in mechanical engineering, and a lot of confidence in your material choices....
