I travel quite a bit and have found that it is best to see how the US dollar is doing vs the currency of the country you are traveling to <in this case the CDN $> . If the US dollar is strong and the rates are going in your favor then it is best to wait <however most airport currency exchange places can have fairly high service fees>.
If it is not going in your favor then you are best to go to someplace local to you to exchange it now. Many banks offer this for a fairly reasonable rate. Some even have a buy-back program where they will exchange back to US $ from the currency you purchased at no extra charge up to the amount you originally purchased. You may also want to consider getting a prepaid visa/MasterCard in the local currency. That way you know exactly how much money you have and have the security of not carrying around a ton of cash. This is what I do for paying at restaurants and most shopping that I have to do. I can then carry a minimum in cash so if I get robbed I am out much less.
