Yes, You can change the 'phrasing" just about for everything, thats one of the greatest features of Legacy.
for marriages, just click next to the date and then go to "Wording Options" What you are seeing as far as the phrases you listed are the "defaults" and those are generally good for many users. (And there has to be some kind of default) And everyone should remember that a simple search in Google can find these things in this case a search for "Wording options for Legacy Genealogy reports" will bring up several links to answers.
