In Master Source Definition--Source Info tab, I put the person's name who is giving me the information. For Type, I put "Interview" even if it's just a phone call. For Publication Facts, I put "Personal knowledge as told to..." with my name.
In most cases, I usually have other sources to back it up. If it is in an email then I use email sources under that person's name then include the full text of the email with date/time in the citation. Not all interviews have to be formal. I did one in a hospital with an elderly aunt and just let the tape recorder run while showing photos and asking questions. I think Interview suggests a much more formal situation, rather than something that just happens to arise in a conversation.
